Stoke’s Wine and Dine dinner series returns on Tuesday August 15th to showcase wines from The Prisoner Wine Company, a Napa Valley winery known for its creative blends and evocative labels inspired by 18th century Spanish artist Goya. Executive Chef Chris Coleman has created a five-course menu, which includes pairings such as NC Clams with grilled peach, vanilla lemon balm breadcrumbs and aleppo pepper with the 2015 Blindfold, a blend of Chardonnay; Spicy Tuna Tartare with black bread, pickled currant, benne and a chorizo spread with the 2014 Cuttings, a Cabernet Sauvignon and Syrah blend; Tomato with plum, stracciatella, cherries, cured pork belly and fennel with the 2015 Saldo, a classic Zinfandel; and Braised Lamb with crowder peas, turnips and burnt tomato jam with the 2014 Thorn, its Merlot, Malbec and Syrah blend. And with the winery’s signature, the 2015 The Prisoner Chef will serve Duck with beets, white cheddar farrotto and apple.
