Squash and Feta Kofta Sandwich

Ingredients

Kofta

  • 1 medium spaghetti squash
  • 1 medium acorn squash
  • 3 scallions, chopped
  • 1 garlic clove, minced
  • ½ cup feta crumbles
  • 3 eggs
  • 1 ¾ cups panko breadcrumbs
  • 1 tablespoon salt
  • 1 teaspoon cracked black pepper
  • ½ teaspoon Ras el Hanout (North African spice blend. Available in spice shops in Charlotte.)
  • Oil for frying 

Israeli Salad

  • 4 tomatoes, ¼-inch diced
  • 2 cucumbers, ¼-inch diced
  • ¼ green cabbage, small chopped (to yield 1 cup chopped cabbage)
  • 2 tablespoons chopped parsley
  • 2 tablespoons olive oil
  • Juice of 1 lemon
  • Salt and pepper to taste

Herb Tahini Dressing

  • 1 cup tahini
  • ½ cup lemon juice
  • 2 garlic cloves, minced
  • 1 ½ teaspoon salt
  • 2 tablespoons cilantro leaves, finely chopped
  • 2 tablespoons parsley leaves, finely chopped
  • 1 tablespoon mint leaves, finely chopped
  • ¾ cup cold water

Sandwich

  • 3 slices Laffah bread or pita bread
  • 3 lettuce leaves


Preparation

Kofta

  • Cut spaghetti squash in half. Scoop out and discard seeds.
  • Using fork, scrape out all squash flesh and set aside.
  • Peel acorn squash and cut in half. Scoop out seeds and discard. Shred the flesh on a box shredder and set aside.
  • In large bowl, mix both squashes, scallions, garlic, feta, eggs, 1¼ cups of panko breadcrumbs, salt and pepper, and Ras el Hanut until well combined.
  • Chill in fridge 15 minutes.
  • Using hands, form golf ball-sized balls and flatten slightly into patty shape.
  • Place remaining panko in a shallow dish, coat each patty in panko breadcrumbs.
  • Heat oil in skillet to medium-high and fry patties until golden brown (approximately 2-3 minutes on each side).
  • Remove from pan and drain on plate covered with paper towel.

Israeli Salad

  • Mix all ingredients in bowl.
  • Add salt and pepper to taste.

Herb Tahini Dressing

  • Whisk tahini with garlic, salt and lemon juice. 
  • Add water until typical dressing consistency is reached.
  • Mix in herbs.

Sandwich

  • Place lettuce on the Laffah and add 4-5 patties.
  • Add Israeli salad.
  • Top with tahini dressing and roll.
