Waldhorn Restaurant’s German Potato Pancakes

Show off your cooking skills to friends and family with this easy to make local Charlotte favorite.

  • 1 pound Yukon Gold potatoes (about 2 medium or 3 small)
  • 1/2 yellow onion, grated
  • 3/4 teaspoon kosher salt (start with smaller amount;add salt to taste)
  • Ground black pepper
  • Ground, fresh nutmeg
  • 1 large egg
  • 1-2 tablespoons olive oil



  • Peel and grate potatoes.
  • Place in clean dishcloth or cheesecloth and squeeze liquid into bowl. Set drained potatoes aside.
  • Let liquid stand a few minutes and then drain, leaving potato starch at bottom of bowl.
  • Add potatoes.
  • Sprinkle grated onion over potatoes.
  • Add egg, and season to taste with salt, pepper and nutmeg. Mix thoroughly.
  • Heat oil in frying pan (for best results, drop just enough oil to coat bottom of pan).
  • Drop about 1/2 cup potato mixture into hot oil and flatten with back of spoon.
  • On medium-high heat, fry 4 to 5 minutes on each side, or until golden brown.
  • Drain on paper towels.
  • Serve hot with applesauce and dash of cinnamon and sugar. Or, serve plain with sour cream.
