Chef Alyssa's Chorizo Meatballs With Pickled Watermelon & Cilantro Yogurt

Show off your cooking skills to friends and family with this easy to make local Charlotte favorite.

Pickled Watermelon


  • 1 quart-size Mason jar with lid
  • Rind from 1/4 of a 4-6 pound watermelon
  • 1 cup white vinegar
  • 1 cup water
  • 2 cups cane sugar
  • 1 tablespoon kosher salt
  • 1/2 serrano pepper, sliced
  • 2 teaspoons allspice berries
  • 3 bay leaves


  • Thinly slice the rind into strips (discarding the very outer bright green skin). Place the strips in a Mason jar.
  • In a sauce pan, bring the remaining ingredient to a boil, turn off the heat and allow the liquid to cool about five minutes.
  • Pour the liquid into the Mason jar (you may have some extra). Screw on the lid and refrigerate eight hours.


Meatballs & Cilantro Yogurt


  • 1 pound chorizo sausage
  • 1 1/2 pounds lean ground beef
  • 2 tablespoons cooking oil
  • 1/2 teaspoon salt
  • 3/4 cup yogurt
  • 2 tablespoons finely minced fresh cilantro
  • Pinch of salt
  • Bamboo skewers or toothpicks


  • Preheat oven to 400 F.
  • In a bowl, combine the chorizo and beef with salt. Portion the mix into 20 pieces. Form the meatball shape by rolling them in your hands.
  • Heat half of the oil in a large skillet and once it begins to smoke, add half the meatballs and cook for about a minute. When they brown, turn to cook on all sides (don’t worry about cooking them all the way through in the pan). Transfer to a sheet pan. Repeat this process with remaining oil and meatballs. Roast in the oven for about eight to 10 minutes to finish cooking.
  • Combine cilantro and yogurt and spread onto a serving platter. Skewer a piece of the watermelon pickle and then a meatball. Dab the base of the meatball to remove any excess grease, and then place on the yogurt base.
