Mert's Heart and Soul’s Soul Roll Recipe

Located in the heart of Uptown Charlotte, Mert’s Heart and Soul is one of the most visited restaurants in the Queen City. Since opening its doors in 1998, Mert's continues to win the hearts of foodies everywhere with their southern, low country, and Gullah-inspired dishes.


  • 1/2 cup diced, cooked and cooled chicken
  • 1/2 cup diced, cooked and cooled collard greens
  • 1/2 cup cooked and cooled rice
  • 1/2 cup of cooked black-eyed peas
  • 1 to 2 cups of vegetable oil (depending on the size of the pan)
  • 1 egg beaten
  • 8 (7" square) egg roll wrappers


  • Combine chicken, greens, rice and black-eyed peas
  • In a large skillet, heat oil to 375°F
  • Place about a 1 to 1 ½ tablespoons of the mixture on each egg roll paper and fold corner up over the mixture.
  • Fold left and right corners toward the center and continue to roll.
  • Brush a bit of the egg on the final corner to help seal the egg roll.
  • Place egg rolls in heated oil and fry, turning occasionally until golden brown.
  • Drain on paper towels or rack.
  • Place on serving plate and top with spicy honey mustard.
