Charlotte Flavor: Tapas 51’s Chorizo Sliders



2 pounds ground pork

1 teaspoon ground cumin

1 teaspoon red pepper flakes

½ teaspoon Mexican oregano

1 teaspoon crushed coriander

2 teaspoons kosher salt

1 teaspoon freshly ground black pepper


12 ounces Venezola Pan de bono mix

16 ounces grated Spanish Cheese

1 whole egg

1 cup whole milk



  • Mix all ingredients together in bowl.
  • Let chill in a refrigerator for 4 hours. 
  • Mold mixture into 16 2-ounce patties.
  • Grill patties for about 3 minutes on medium-high heat on each side.



  • Add flour mixture, cheese and egg to mixer with paddle attachment and mix on medium speed until mixture is consistency of biscuit dough. 
  • Slowy drizzle milk over bread mixture until fully combined.
  • Let rest for 15 minutes. 
  • Bake at 450 F for 20 to 30 minutes, rotating bread midway through cooking process.
  • Cut bread to create buns.


  • Add sliders to buns and top with favorite toppings.
