The Melting Pot’s Pale Ale Cheese Fondue

Show off your cooking skills to friends and family with this easy-to-make, local Charlotte favorite.


  • 8 ounces NoDa Brewing Company Jam Session Pale Ale
  • 1 shallot, diced
  • 1 tablespoon whole-grain mustard
  • 5 ounces Butterkäse cheese (Roth Kase brand is recommended)
  • 5 ounces fontina cheese (Roth Kase brand is recommended)
  • 2 tablespoons corn starch
  • 1 teaspoon black pepper, freshly ground
  • 1 loaf French bread
  • 1 loaf pretzel bread, lightly salted
  • 1 Granny Smith apple
  • 1 bunch red grapes


  • Shred cheeses (a food processor is recommended).
  • In mixing bowl, blend Butterkäse and fontina cheeses.
  • Add corn starch to cheeses and toss until all cheese is coated.
  • Peel and dice shallot.
  • Cut bread into 1-inch cubes.
  • Core and dice apple and place in cold water flavored with splash of lemon juice.
  • Pour pale ale into double boiler and turn to high.
  • After boiler begins to steam, add shallots and whole-grain mustard to beer.
  • Add 1/3 of cheese and mix thoroughly using fork.
  • Add next 1/3 of cheese and mix thoroughly.
  • Add remaining 1/3 of cheese and mix thoroughly, using whipping motion, until all cheese is melted.
  • Add black pepper and mix thoroughly.
  • Whip until all ingredients are incorporated and cheese has texture of warm honey.
  • Turn burner down to simmer/low.
  • Place prepared cheese fondue on simmer or low heat for serving.
  • Provide bread cubes, diced apples, grapes and sliced seasonal vegetables of your choice, like local grape or cherry tomatoes, for dipping.
  • Provide guests with fondue forks, and enjoy!
