Sea Level’s Corn Fritters

Show off your cooking skills to friends and family with this easy-to-make local Charlotte favorite.

Ingredients (serves 12)

  • 1 1/2 cups corn kernels (fresh or frozen)
  • 1 1/4 cups whole milk
  • 1 tablespoon melted butter
  • 1 egg, lightly beaten
  • 2 1/4 cups all-purpose flour, sifted
  • 1 cup sugar
  • 1 teaspoon kosher salt
  • 1/4 teaspoon baking powder
  • Cooking oil (enough to fully submerge fritters in deep fryer or small sauce pan)


  • Heat oil to 350 F (high temperature thermometer is recommended) in deep fryer or small sauce pan.
  • Whisk together milk, egg, melted butter and corn.
  • In separate bowl, mix together flour, salt, sugar and baking powder.
  • Mix wet ingredients with dry ingredients.
  • In small batches, drop batter into hot oil using spoon or small ice cream scoop, creating approximately 1.5-ounce scoops.
  • Fry in deep fryer or small sauce pan until golden brown, approximately 6 minutes.
  • Remove from oil and drain on paper towels.
  • Serve with your favorite dipping sauce, like spicy aioli or remoulade.
