Leroy Fox’s flagship location in the historic Cotswold neighborhood is a local staple, serving an assortment of salads and sandwiches topped with fried or grilled chicken as well as flavorful eats such as the Crispy Beet Burger (fried beets, avocado, goat cheese cream spread, pickled red onion and lettuce on a toasted brioche bun). With a second location opening on Camden Road in South End later this fall, the restaurant continues its reign as Charlotte’s Southern contemporary hot spot for a hearty fare and homegrown hospitality. Ingredients 

1 large zucchini 

2 cups all-purpose flour 

1 tablespoon garlic powder

1 tablespoon onion powder

2 teaspoons cayenne pepper

2 teaspoons paprika

1 teaspoon salt

1/2 teaspoon black pepper

4 cups buttermilk

4 cups canola oil

1 teaspoon chopped parsley

Preparation

Using a knife, cut off both ends of the zucchini, and slice it in half lengthwise. Cut each half in two (widthwise), and slice each quarter into strips approximately 1/2 inch thick. In a mixing bowl combine the flour, garlic powder, onion powder, cayenne, paprika, salt and black pepper. Mix thoroughly.

In a small bowl, soak the sliced zucchini in buttermilk for approximately 15 seconds. Remove the zucchini and place it in the seasoned flour, mixing until completely coated. In a medium sauce pot, bring the canola oil to 350 degrees using thermometer to gauge. Sift any loose flour off the zucchini, then place the zucchini in the oil for approximately two minutes.

Remove the zucchini from the oil. Strain and toss the slices in chopped parsley.
