1 1/4 ounces of rum
3/4 ounces of brown sugar ginger syrup
3/4 ounces of lemon juice
2 small pieces of fresh thyme
6 red grapes
Fresh cracked black pepper
Add the syrup, grapes and thyme to a shaker tin and muddle well.
Add the lemon juice and rum, then shake.
Strain the mixture into a coupe glass.
Garnish with pepper and thyme.
Brown Sugar Ginger Simple Syrup
1 cup of brown sugar
1 cup of water
2 knobs of ginger, diced
Combine all the ingredients in a pan on low heat.
Once combined, remove the pan from heat, and let it steep for two hours.
Remove the ginger, and transfer the syrup to a squeeze bottle.
